Milk, Egg and Soy-free Birthday Cake Recipe

Double Layer Birthday Cake

  • 3 c. cake flour
  • 1 ¾ c. sugar
  • 1 ¼ c. water
  • ½ c. shortening
  • 2 ½ tsp. baking powder
  • 3 tbsp. water + 3 tbsp. oil + 2 tsp. baking powder, mixed together
  • 1 ½ tsp. vanilla extract
  • 1 tsp. salt

Preheat oven to 350 degrees. Grease and flour 2 round cake pans. Combine all ingredients in a large bowl, beat until mixed well. Pour batter into cake pans. Bake 40-45 minutes or until a cake tester inserted in center of cake comes out clean. Cool in pans 10 minutes before removing to wire racks. Frost with Cocoa Frosting when completely cooled.

Cocoa Frosting

  • ½ c. milk-free, soy-free margarine, softened
  • 2- 2/3 c. confectioners sugar
  • ½ c. unsweetened cocoa powder
  • ¼ c. water
  • 1 tsp. vanilla extract

In a large bowl, beat margarine until softened. Add remaining ingredients, beat until creamy.
